Plainly Speaking
Cuisine and culture are the central ideas of the installation created in this space. A video projection shows a passage taken from Italo Calvino’s Lezioni Americane (‘American Lectures’), which faces a map depicting the globe in reverse. So often culinary culture subverts our convictions. It muddles and it unites: a hybrid. But, above all, it permits unions and unthinkable combinations.
